pizza crust..



pizza holds a special place in my heart. especially after discovering what all the buzz was about, when i lived in new york. now, every trip back includes a stop back at The Famous Original Rays in the village...maybe a stop at two boots..maybe a stop at Lombardi's, if i want to sit down..Here in pittsburgh, the closest thing that i've found to good, cheap, new york style pizza is Bites & Brews, in Shadyside.

Like many people, i wish i could make a decent pizza at home..or at least decent pizza crust at home. So the research began. I checked out The Bread Baker's Apprentice and actually READ (i know, novel) the basics of dough/yeast/etc. I bought a baking stone with some wedding money. and last night, with the flour chilled, and the water ice cold, and the metal spoon, and the oiled parchment, i made 3 balls of dough, rising in the fridge as i type this. tonight will be the actual feasting and i'll be sure to post the results.
